I am the only person bringing something even remotely British/Irish to our St. Patrick's Day potluck at my office tomorrow. I am making traditional English sausage rolls.

I'm taking pictures as I do it, I'll post them later. I'm at my parents' house, and we're eating some for dinner. We made two test rolls earlier to see if we preferred them cooked with mustard inside or no mustard, and they were delicious.

So it's a beautiful morning, and my fridge is bare. I decide to drive into Santa Barbara to go to Trader Joe's and get some good food. I picked up a different triple cream brie (this is much sharper) from France, some feta from Israel, some havarti from Denmark, roasted yellow & red peppers (to go with the feta), a crispy baguette, some more Bogle Petite Syrah, and a few of their amazing frozen Mexican food products.

On the way back, it was 72 degrees and the hills on my drive home looked spectacular. The torrential rains of the last few weeks have made them green and the hills reminded me of Ireland. So I got out of my car in a few places and took pictures. Sorry these were taken with my crappy phone camera, but you get the idea.

ETA: This Israeli feta is amazing! God this is the best feta I have ever had. Eating it on baguette with roasted peppers. Mmmm...I am going to explode from cheese overindulgence.

My mother busted out the deep fryer today to make homemade potato chips for our snacks. Well, I couldn't resist having this opportunity, so I made Deep Fried Coke.

I just had a dinner of 2 different kinds of brie (leftover from the new year's eve dinner party I went to), crusty french bread, and Laphroaig scotch. Can't get much better than that.

And to be totally uncouth, I'm making baked chicken with rice. I know, I know, mixing poultry with red is trashy, but I don't have any white. Fuck it.

I can't wait to move to the Central Coast. I'm going to make a point to go to every winery within 100 miles. That will be a lot of fun.

So today I'm driving the 3 hour ride home from my parents' house, and I get thirsty and also have to pee. So I pull over to this humongous gas station and go into the Stop N Rob shop and use the bathroom (very clean, I was happy to find) and got a Diet Coke and found I wanted something to munch on. So I went over to the chips and found:

I just ate a dinner of Bar-M Louisiana Extra Hot smoked sausage, split in half and pan fried, with organic boxed mac & white cheddar. Damn that was good! Especially the sausage. It was very very spicy.

When you're sick (as I am still sick - the doctors say it's a viral infection of my tonsils - I am so weak and tired still - it's been 3 days) nothing tastes better than grilled cheese and soup. So this is what I just made:

Mishima Red Miso Instant Miso Soup mix (only 35 calories per serving, yum!)
(Also the White Miso and the Spicy Miso variations are fabu as well)

Grilled Cheese (under 425 calories to boot):

2 slices Oroweat Oatnut bread
2 slices Borden 2% American Singles
2 oz Buddig Sliced Turkey
Smart Balance Light Margarine (but you can actually cook with it)

Heat up a pan on low heat. Take 1 teaspoon of margarine and spread it on one slice of bread, and then sprinkle with garlic salt. Place bread butter side down in pan, and lay out cheese slices. Get your handy dandy bottle of Sriracha (I'm sure Coinneach has some in his fridge) and dab it all over the cheese to give it some spicy heat. Then on top of the cheese lay out thin layers of the turkey, and let it sit opened face on the stove for about 3 minutes, so the turkey (or ham, or chicken, whichever you choose) gets warm. In the meantime, spread another teaspoon of margarine on the other slice of bread, sprinkle it with a little more garlic salt and some sort of garlic/herb spice mixture. After the bottom half has slowly cooked on low heat (the bread should be brown and crispy at this point, but not burned), add the top slice of bread and then flip the sandwich. Then cook for about 90 seconds until the other side is brown (and not so crispy because the pan is much hotter now and will burn faster. Voila! Put on a plate, cut in half, and watch the gooey spicy goodness come out of the sandwich. Mmmmm....

Well, since my weigh in on Saturday I have been very good and have not gone over my 1400 calories a day. It doesn't hurt to be sick and 90% of the time I have not felt like eating much. I do not know if I have lost any weight in these last few days. All I know is just getting up to make that sandwich has made me exhausted. I hope I don't have mono...that would suck. I had it 4 times as a kid. So, everyone wish me good health.
