Dinner!

WD-50!

Here's my gastronomical adventure tonight.

Let's start off with the complimentary amuse bouche (I will try my best to remember what was in everything) of fried frog's legs with a pomegranate reduction with some sort of fruit balls that were sort of like caviar with kelp pieces on top. It was weird, I won't deny it, and it was the first time I had tried frog's legs, but it was interesting:




Next was the hanger steak tartare on top of almond paste and drops of hyacinth reduction with banana powder and crispy strings of fried sweet potato. The flavors were very odd yet harmonious, and the combination of bloody/tartare with the sweet really sort of blew my mind.



Then it was the entree of pork loin with coconut mustard sauce with these fried sweet potato balls and pickled leeks with bitter greens and I can't remember what the clear things were. I actually thought this was a bit weird, and the flavors were so complex my mouth got a little confused. But the pork was very good and I liked the little clear things and the sauce. I think it was the potato balls that made the dish kind of strange.



I ordered the 3 course dessert tasting menu, and first they brought out another complimentary amuse bouche, which was actually my favorite dish of the night. It was a tart ice cream with powdery raspberry crumbles on the outside.



But the most amazing part was when I broke it open with my spoon, the ice cream had a center of balsamic vinegar and the added burst of flavor was so amazing it made my tastebuds sing. I loved this so much.



Then there was cheesecake which was very tart and citrusy with a lime ice cream and a pineapple gel and gelatinous slivers of pineapple pieces with pickled raisins. This too was amazing and I loved the flavor combinations.



Then there was a caramelized brioche that inside had this carmel filling, along with a ribbon of buttercreme (the best buttercreme I have ever tasted) with a vanilla ice cream and a cardamom (?) foam. When the filling inside the brioche met the ice cream it hardened instantly into a crunchy sugar. It was very good.



Last was the "soft chocolate" which was chocolate ganache, and cardamom cake and peppermint ice cream and it was sitting on a bed of chocolate cookie crumble that had a hidden molten chocolate mint sauce underneath the crumble. On top of that were these little wiry pieces of chocolate. This was magnificent.



Along with dinner I had an excellent glass of Syrah and with dessert I had a really good double espresso. Overall, I have to say the desserts were the best part of the meal. The pastry chef there is a true artist.


The dinner itself was very interesting, and the flavor combinations were totally mind blowing. While some of the things tasted very strange to me, I really appreciated the depths of flavor and the artistry and I was really glad I went there. How many times can you say you've had food like that? And like I said in my last post, Wylie Dufresne was so sweet and nerdy and cute and I told him how much I loved Top Chef and he said "Next time I'll try to do better" (in the current series "Top Chef Masters" he sort of flamed out in the first round, but I really appreciated his efforts) and I told him I thought he did well, and that he probably already knew who won (he winked at me and said "For $20 I'll tell you." and I laughed and said I didn't want to be spoiled...oh my god he is so cute) but I always love him on the show when he's a judge or a competitor.

So I had a blast. Then I went to Times Square - OMG it is insanity on a scale I have never witnessed before. It was really cool.

Ok, I have to go to bed. I'm exhausted. And tomorrow I'm getting together with [livejournal.com profile] msginnyo and I'm really excited!
