Poached chicken breast on a bed of Mahatma Saffron Yellow Rice topped in sauteed red bell peppers and onions, along with a steamed artichoke. I steamed the artichoke with chopped garlic, white wine vinegar and olive oil drizzled over the leaves before steaming.
